Stecca (baguette) bread

This is probably one of the easiest and most delicious breads I have ever made. It takes a while to make because of the long rising time, but apart from that it is very easy. This bread is good on its own with some butter on, but it is also great to serve with soups and salads. The bread is really almost like a baguette which also makes it perfect to serve with all sorts of pasta dishes.

I added a spice mix meant for bread to this dough and that really gave the bread an amazing flavor. The spice is a mix of coriander, anise, fennel and caraway.

Ingredients
  • 20 g yeast
  • 250 ml water
  • 1 tsp salt
  • 1 tbsp bread spice
  • 300 g flour
  • Cheddar cheese
  • Rosemary
Instructions
  1. Mix the yeast and water (above room temperature) and let it activate for a few minutes.
  2. Add the rest of the ingredients and mix together. Do not knead the dough, just make sure it is properly mixed.
  3. Cover the bowl and let it rise for at least 2 hours.
  4. Knead the dough a little and divide into three pieces.
  5. Shape the pieces into long flat breads and lay them on a lined baking tray.
  6. Let them rise for about 1 hour.
  7. Add grated cheese and rosemary on the top and brush lightly with some olive oil.
  8. Bake for 12-14 minutes on 250 degrees Celsius.
